ingredients
- 1kg carrots
- 2 cups milk
- 1 can (395g) condensed milk
- 1 tbsp green cardamom (elaichi)
- 1/2 cup sultanas
- 1 cup assorted nuts (cashews, almonds, pistachios)
- 3 tbsp sugar
directions
1. Peel and chop the carrots into large cubes. Use a food processor to blend the carrot until finely grated.
2. Use a heavy bottom large pan (to prevent the halwa sticking) and heat on medium flame. Add the carrots into the pan and saute for 10-15 mins until softened.
3. Add the milk, sugar and condensed milk to the pan.
4. Add the sultanas, cardamom and half of the assorted nuts.
5. Continue to simmer for 30-40 mins until the carrot has softened and the milk has begun to evaporate.
6. Sprinkle with the remaining nuts.
7. Serve hot or cold or both!
